Looking for a quick and easy weeknight dinner packed with flavor? I've got the perfect Hapa recipe for you! But what is Hapa (hop-AH)? "Hapa" is a term used to describe people of mixed Asian and Caucasian heritage. Growing up with an Australian mother and a Korean father, I'm passionate about sharing fusion dishes like these Ground Turkey Lettuce Cups! This dish is made in one pan and comes together with staple Asian ingredients packed with umami, a Japanese term meaning "pleasant savory taste.” Feel free to substitute any type of ground meat you have on hand! They are so tasty that you’ll probably want seconds. If you have leftovers, serve them over rice instead of in the lettuce cups for a heartier meal. My toddler Henry loves this dish and I think your family will too!
1 Tablespoon minced garlic 1/2 Tablespoon grated ginger 2 Tablespoons rice vinegar 1/4 cup low-sodium soy sauce
1/3 cup Hoisin sauce 1 Tablespoon Sriracha 1 head of Bibb lettuce (can substitute with romaine or iceberg) For garnish: scallion greens and sesame seeds
Preparation: 1. Heat sesame oil in a medium- sized skillet over medium-high heat. 2. Add ground turkey and cook, breaking it up with a spoon, for 3-4 minutes, or until almost all pink is gone. 3. Add onion, bell pepper, water chestnuts, garlic, and ginger. Sauté these ingredients for 5 to 6 minutes, or until the onion is translucent. 4. Reduce heat to low. Add rice vinegar, soy sauce, hoisin sauce, and Sriracha. Stir to combine. 5. Serve over lettuce cups. 6. Garnish with scallion greens and sesame seeds.
